Crispy & Fruity Protein Bars (gluten-free, dairy-free)By Suni Ferrer
Makes 5 snack servings.
STEP 1 ingredients:
• ½ cup nuts/seeds (I used ¼ cup pumpkin seeds and ¼ cup cashews)
• ½ cup dried fruit (I used ¼ cup raisins and ¼ cup cranberries)
• 1 scoop Shaklee Vanilla Shaklee Life Shake Mix (or Instant Protein)
• Optional: add 1 Tbsp chia seeds or flaxseed-meal
• ½ tsp vanilla extract
• Pinch sea salt
STEP 2 ingredients:
• ¼ cup rolled oats (I use gluten-free from Trader Joe’s)
• ¼ cup crispy rice cereal (I use organic brown rice cereal, Erewhon brand)
(You could replace the two ingredients above with ½ cup crunchy granola)
Note: If using a food processor instead of a high-speed blender, you may need to add a small amount of grapeseed oil or melted coconut oil, so the bars hold up without crumbling.
Directions:
1. Add all Step 1 ingredients and run food processor or high-speed blender until desired texture is reached, about 30-40 seconds on Speed 1 with Blendtec Twister Jar. If using food processor, pause to scrape down sides if necessary and run again 30 seconds at a time.
2. Add the step 2 ingredients and pulse a few times until well combined.
3. Use spatula to scrape and dump fruit/nut blend onto plastic wrap or parchment paper and fold plastic or paper over mixture.
4. Press the mixture with hands or roller into a thin rectangle.
5. With knife or pizza cutter, cut into 5 bars or 20 squares.
6. Eat as is or refrigerate to harden if desired.
