Crispy & Fruity Protein Bars (gluten-free, dairy-free)

Crispy & Fruity Protein Bars (gluten-free, dairy-free)

Makes 5 snack servings.

STEP 1 ingredients:
• ½ cup nuts/seeds (I used ¼ cup pumpkin seeds and ¼ cup cashews)
• ½ cup dried fruit (I used ¼ cup raisins and ¼ cup cranberries)
• 1 scoop Shaklee Vanilla Shaklee Life Shake Mix (or Instant Protein)
• Optional: add 1 Tbsp chia seeds or flaxseed-meal
• ½ tsp vanilla extract 
• Pinch sea salt

STEP 2 ingredients:
• ¼ cup rolled oats (I use gluten-free from Trader Joe’s)
• ¼ cup crispy rice cereal (I use organic brown rice cereal, Erewhon brand)
(You could replace the two ingredients above with ½ cup crunchy granola)

Note: If using a food processor instead of a high-speed blender, you may need to add a small amount of grapeseed oil or melted coconut oil, so the bars hold up without crumbling.

Directions: 
1. Add all Step 1 ingredients and run food processor or high-speed blender until desired texture is reached, about 30-40 seconds on Speed 1 with Blendtec Twister Jar. If using food processor, pause to scrape down sides if necessary and run again 30 seconds at a time. 
2. Add the step 2 ingredients and pulse a few times until well combined.
3. Use spatula to scrape and dump fruit/nut blend onto plastic wrap or parchment paper and fold plastic or paper over mixture. 
4. Press the mixture with hands or roller into a thin rectangle. 
5. With knife or pizza cutter, cut into 5 bars or 20 squares. 
6. Eat as is or refrigerate to harden if desired.

Home made Healthy Cookies


HOME MADE HEALTHY COOKIES
Try this delicious recipe from the kitchen of Suni Ferrer, Senior Director, IN.

Life Protein Nutty & Salty Cookies (gluten-free)
Makes 10-12 cookies (5-6 snack servings, 2 cookies per serving)
• 3 Tbsp organic butter, softened (or coconut oil)
• 2 Tbsp organic sugar (or 3 Tbsp Shaklee Performance® for orange or lime flavor)
• 2 scoops Shaklee Life Energizing Shake™, Vanilla or Café Latte flavor
• 2 Tbsp almond milk (or water)
• ½ cup almond meal
• ½ cup rolled oats (gluten-free)
• ½ tsp vanilla extract
• 1/8 tsp Himalayan pink salt (or sea salt)
• ¼ tsp liquid stevia or to taste
• optional: ¼ cup your favorite mix-ins dried fruit (cranberries or shredded coconut), nuts, or mini-chocolate chips, have fun experimenting!

Directions:
In a bowl, cream butter, vanilla, and sugar using a spoon. Mix in remaining ingredients. Scoop 10-12 balls and place 2-3 inches apart on nonstick baking sheet. Press down each ball with a wet fork in one direction, then the other direction. Bake at 325 F in preheated oven for 15 minutes. (Ovens vary so check after 10 minutes, they brown fast.) Place on cooling rack for 10 minutes. Enjoy!

Makes 1 serving 297 Calories

8 oz. nonfat milk (low-fat soy milk can also be used)
1/2 cup fresh or canned pineapple
1/2 tsp. coconut extract
Ice (as needed)

297 calories, 24 g protein, 41 g carbohydrates, 3 g fat, 7 g fiber
Combine all ingredients in blender. Blend until creamy.

Feeling pretty excited! I was going thru a box of clothes my mom sent me -- ones that were her's in the 50s & 60s, which I *loved* to wear in Jr High & HS...and -- this one fits me again!! I haven't worn it since HS, some 22 years ago! I love these vintage styles, always have

This is such a great testimonial on how you can change your life if you have a want, need, or just want to build health as Maureen has.  You decide.    
Maureen’s story: So, where do you start in retelling the past 50+ years of your overweight life? I have always been overweight, a good majority of the time MORBIDLY OBESE!! Yes, that is what the Doctor put on my chart. It sure isn’t anything I would brag to anyone about and it was just another one of those feelings I would just push down inside of me, along with all of the rest of the insecurities that go along with MORBIDLY OBESE!!
Not being able to hold my grandchildren on my lap. Why?? Because I had no lap! Going with my family to the Zoo and saying “I’ll wait for you here.” Why?? Because my knees were bothering me so bad, and being tired from walking and huffing and puffing up the inclines.
Having people look at you and imagining what they are thinking. Having people laugh at you. Trying to look ahead when the hostess is seating you in a restaurant to make sure that wherever they are taking you, you will be able to squeeze through. Getting on an airplane and being worried about who is around you when you board and wondering if they will hear you when you try to quietly ask the Flight Attendant for a seat belt extender. 
Then it was all the different weight loss plans. Weight Watchers (how many times did I join??? I can’t even remember), TOPS, Diminishing Dimensions, Low Carb diet, and finally attending a meeting for Bariatric Surgery. Did I lose weight on any of these diets? Definitely. Did I gain the weight back? Absolutely! And, the pounds I lost had a lot of friends that they brought back with them!
Then, in November of 2011, our son and daughter-in-law Josh & Kate Virkler from IL came to CT for our family Thanksgiving/Christmas holiday. They had started a Shaklee business previously and we had become distributors under them and begun using some of the products. We especially liked Joint Health Complex, NutriFeron and Defend and Resist. 
Josh came to me with a bit of trepidation as a concerned son who, at that time, was the father of three. He had already spoken with the rest of the family, and they had all agreed to start a Shaklee weight loss program together to help me find the motivation and will power to do something with my health problem so I would be around to enjoy my family.

I agreed to try…with some reservation. Let me just say it was one of the smartest things I have ever done in my life!! NEVER have I been on a weight loss program that is as easy as this. NEVER have I been on a weight loss program that I have lost this much weight. NEVER have I been on a weight loss program where I have seen such improvements in my health. NEVER have I been able to stay on a weight loss program for this amount of time. I am down 70+ pounds, dropped many sizes in clothing, and been able to go OFF my diabetes medication totally!!!
I am continuing my weight loss journey as I am about 50-60 lbs. from goal but I know that this is a lifestyle change and I feel that I can live happy and healthy with Shaklee for the rest of my life...and I can now hold my grandchildren on my LAP!! ~ Maureen
